Brasserie Mon Chou Chou is the brainchild of Chef Laurent Réa, Philippe Placé, and Jérôme Sérot—French food lovers who met nearly 20 years ago in San Antonio.

Steve Bennett from the San Antonio Report documents the design of the 12-story Credit Human building, the eight-story Oxbow building, and a 936-space parking garage.
The creative partnership behind the project includes Silver Ventures, the developer of Pearl, which retains ownership of the Oxbow building; Kirksey Architecture of Houston working with Don McDonald Architect, the local firm that designed the luxury Cellars apartments at the Pearl; and a slew of local artists, including metal sculptors Robert De Leon and Roy Bellows, ceramics artist Ryan Takaba, bronze sculptor William Carrington, the Isaac Maxwell Metal Studio, stone sculptor Matthew Johnson, and Kersey.
“A lot of thought went into these buildings,” said Elizabeth Fauerso, chief marketing officer of the Pearl. “We wanted to work with Don [McDonald] again, as we had with the Cellars, because he puts so much of the South Texas architectural vernacular into his work, without seeming to imitate a historic style. These buildings feel like they’ve been here a long time – and will be here a long time in the future.”
Additionally, the buildings achieve an unprecedented commitment to sustainability.
For starters, the buildings are as airtight “as a Yeti cooler,” said said Stephen Hennigan, president and CEO of Credit Human.
